Rajasthani Baati Recipe
Ingredients of Baati :–
- Whole Wheat flour ( मोटा आटा ) – 1kg
- Salt – 1 teaspoon
- Ghee – 300-400 gm
- Semolina – 250gm (only if required)
Baati Preparation
How to make Baati :-
- To prepare the baatis, take wheat flour and add salt and 200gm ghee to it. If (मोटा आटा ) whole wheat is not available take 3/4 normal wheat and 1/4 semolina (rawa).
- Slowly add water and using your hands, knead a very stiff dough. Don’t knead loose dough otherwise, the baati will not be crusty. Leave it for 15 minutes.
- Shape the dough in the size of a tennis ball and slightly press it. Heat a gas tandoor and place the dough balls on medium heat for some time.
- After every 5 minutes turn over the baatis and repeat it until they are brown and crusty. This whole procedure takes about 25 to 30 minutes.
- Take out the baatis from the tandoor and heat ghee on the gas and switch off the flame. Dip the baatis in the ghee one by one.
- Make sure you add sufficient ghee in the baatis otherwise it will become dry and hard later on.

Rajasthani Choorma Recipe
Ingredients of Choorma :
- Whole Wheat flour ( मोटा आटा ) – 1kg
- Ghee – 350-400 gm
- Milk or Water, as needed to bind the dough
- Powdered Sugar – 1kg
- Soaked Almond (chopped) for garnishing – 15-20
- Cardamom – 8-10
Choorma Preparation
How to make Churma :-
- To prepare the baatis, take wheat flour and add 200 gm ghee to it. If
(मोटा आटा ) whole wheat is not available, take 3/4 normal wheat and 1/4 semolina (rawa). - Slowly add water and using your hands, knead a very stiff dough. Don’t knead loose dough otherwise, the baati will not be crusty. Leave it for 15 minutes.
- Shape the dough in the size of a tennis ball and lightly press it. Heat a gas tandoor and place the dough balls on medium heat for some time.
- After every 5 minutes turn over the baatis and repeat it until they are brown and crusty. This whole procedure takes about 25 to 30 minutes.
- Take out the baatis from the tandoor.
- Break Batis into small pieces using your hand and place them in a mixer grinder jar.
- Grind it but make sure the powder is not very fine it should be coarse.
- To this powder add powdered sugar and melted ghee.
- Mix it well and you can vary the measure of powdered sugar and ghee according to your taste. Garnish Churma with almonds and cardamom for nice aroma and flavor.

Dal
Ingredients of Dal :
- Soaked, washed & dried Yellow Moong Dal -2 cup
- Washed & dried chana dal -1/2 cup
- Garam masala powder – 1/4 teaspoon
- Powdered red chilli – 1 teaspoon
- Turmeric – 1/2 teaspoon
- Cumin seeds – 1/2 teaspoon
- Coriander leaves
- Green Chilli – 1-2
- Grated ginger – 1/2 inch
- Mustard seeds – 1/4 teaspoon
- Salt to taste
- Ghee – 2-3 tablespoon
- Onion – 1
- Asafetida – 1 pinch
Dal Preparation
How to make Dal:-
- Wash both the dals together add turmeric, salt, and 5 cup water. Pressure cook the dals till 3 whistles. Allow the cooker to cool and remove the dal.
- Place ghee in a pan over medium fire, include the cumin and asafetida. When they splutter, add onion, ginger and green chilli.
- When the onion turns golden brown add red chilli powder and after that add it in dal. Heat dal on low flame when it starts boiling add garam masala and coriander leaves to garnish it.
