Ingredients
- 1 cup all-purpose flour (maida)
- 2 tbsp gram flour (besan)
- ½ tsp baking powder
- 1 tbsp ghee
- 1 tbsp yogurt
- ¾ cup water
- Oil for frying
- For the syrup:
- 1 cup sugar
- 1 tsp lemon juice
- ½ cup water
- A few strands of saffron (optional)
Instructions
In a mixing bowl, add all-purpose flour, gram flour, baking powder, ghee, and yogurt. Mix well.
Gradually add water to make a smooth and thick batter. Beat the batter well for 5 minutes to incorporate air into it. This will make your Jalebi crispy.
Heat oil in a frying pan. Fill the Jalebi batter in a squeeze bottle or a piping bag with a Jalebi nozzle. Squeeze the batter into the hot oil in a circular motion to make small swirls.
Fry the Jalebi until golden brown and crispy. Remove them from the oil and place them on a kitchen towel to absorb excess oil.
In a saucepan, add sugar, water, and lemon juice. Heat the syrup on low flame and stir until the sugar dissolves completely.
Add cardamom powder and saffron to the syrup and let it simmer for 5-7 minutes until it thickens slightly.
Dip the Jalebi in the warm syrup and let them soak for 1-2 minutes. Remove from syrup and serve hot
