Many green vegetables come in winter, Bathua is also one of them. It is very beneficial for the body, because it contains a lot of iron and vitamin A. Also, its effect is warm, it keeps the cold away from us. Bathua is made in many ways, one way in this is Bathua ka Raita, it looks very tasty, and can be made easily in a few minutes.

Ingredients of Bathua Ka Rayta

Bathua – 200 grams
Curd – 2 cups (whipped)
Salt – 1/2 tsp (as per taste)
Asafoetida – 1 pinch
Cumin – 1/4 tsp
Mustard seeds – 1/4 tsp
Red chili – 1/4 tsp
Oil – 1 tsp


Method – How to make Bathua Ka Rayta

  1. Firstly clean Bathua by plucking its leaves by separating the stems from the end.
  2. Then wash it 2 to 3 times in clean water, and cut it into small pieces.
  3. Then put it in the cooker and add a bowl of water and 1/4 tsp salt and keep it for boiling. After one whistle, turn off the flame.
  4. Let it cool down. Now drain the excess water from the bathua.
  5. Now mash the bathua using hand.
  6. Take curd and whisk it then mix Bathua in it, add red chili and salt along with it.
  7. Now heat oil in a pan, then add asafoetida, mustard seeds and cumin seeds, it will crackle and become crispy. Turn off the flame.
  8. Mix it in Raita, Bathua ka Raita is ready.
  9. Serve Raita with chapati, paratha, Nan etc. It increases the taste of food.

Suggestions –

  • Raita can be made only by roasting cumin seeds on a griddle and grind them and mix them in the raita.
  • You can also make raita by adding bathua to buttermilk.
  • You can knead the dough with boiled bathua water.
