IDLI
Ingredients for Idli
(5-6 people serving) :
- 3 small bowl – Rice
- 1 small bowl – Urad
dal - 1 tsp – Dana Methi
- 1/2 tsp – Baking soda
- 1 tbsp – Salt (salt to taste)
Recipe of Idli:
- After washing rice and urad dal separately, add fenugreek seeds to the dal. Soak all of them in water for 4-5 hours. Drain all the water, and grind them to a fine paste. Add water accordingly. Rice paste should be coarse.
- Keep the idli batter in a warm place for 8-10 hrs to be fermented to get soft and fluffy idlis. During winters fermentation takes time
so keep the batter covered with thick cloth. - While making Idli add baking soda and salt to it and whisk to mix it well.
- Add little water in the cooker and let it boil, use it without a vent.
- Apply oil in the idli stand to avoid sticking of idli and fill the idli
mould with the batter. Put the idli stand inside and close the lid. - Let the steam build for 15-16 minutes before switching off the gas.
To scoop the idlis out use a sharp knife.
SAMBAR
Ingredients for Sambar
(5-6 people serving) :
- 1 small bowl –
arhar dal - 1 onion
- 2 tomato
- tamarind (imli)
- 2 green chilli
- 2 red chilli
- 1 tbsp – red chilli
- coriander leaves
- 1 small bowl – vegetables (beans, drumstick, carrot, pumpkin, etc )
- 2 tbsp – sambar masala
- 1/2 tsp turmeric
- 3 tbsp – oil
- 1 tbsp – jaggery or sugar
- 8-9 curry leaves
- 1/2 tsp – fenugreek seeds
- 1 tbsp – salt to taste
- 1/2 tsp – mustard seeds
Recipe of Sambar:
- Wash
arhar dal, put it in a pressure cookeradding 4 cup water. Add salt and turmeric in it. Cook it for 3 whistles, now remove it from the flame. - Take a frying pan, heat oil over medium flame. Add fenugreek seeds and mustard seeds. After they start to
splu tter add 2 red chilis, onions and curry leaves in the same pan. Allow it to turn slightly golden in color. - Add the chopped vegetables and tomato. Along with it put turmeric and salt in it. Allow it to cook properly.
- Now add sambar masala and red
chilli powder after the vegetables are cooked. - In this sambar recipe now add
imli water and jaggery. Now pour the boiledarhar dal in sambar and let it cook for another 10 min. - Also before removing your sambar from the flame do not forget to add a pinch of garam masala and coriander leaves in it.
Delicious Sambar is ready.
COCONUT CHUTNEY
Ingredients for Coconut Chutney
(5-6 people serving) :
- 1 cup – grated coconut
- 1 cup – roasted chana dal
- 2 green
chilli - 1small piece chopped ginger
- pinches salt to taste
- refined oil
- 1/2 tsp – mustard seeds
- 7-8 curry leaves
Recipe of Coconut Chutney :
- To make Coconut Chutney recipe, grind grated coconut, chana dal, ginger, and some water in a blender. Make sure that its consistency is thick and not too thin.
- Heat oil in a small pan over medium flame. Once it is sufficiently hot, add mustard seeds, and curry leaves. When they start to
splutter add some finely chopped greenchillies . If you want your Coconut chutney to be spicier you can add 1-2 redchilli in it. - Bring them off the flame and pour over the Coconut chutney. Add salt to taste in it and mix the ingredients properly before serving.
Coconut Chutney is ready. Serve the delicious chutney with idli and sambar.
