Rajasthani Dahi Vada Recipe | How to Make Dahi Vada

Rajasthani Dahi Vada is a famous North Indian delicacy, that you can enjoy anytime. Today I’ll be sharing with you a very famous Shahi Shekhawati Dahi Vada recipe which is different from the regular dahi vada because of its melange of spices, chutney, crunchy vada and yogurt preparation. With festivals around the corner, this traditional Dahi Vada recipe makes for a delicious, healthy and easy to digest dish because of the addition of yogurt. So take the feel of “PADHARO MAHRA DES” and enjoy this recipe at your home without even visiting Rajasthan.

Ingredients for Vada

  • Moong dal (Mogar)- 250 gram
  • Salt (to taste)- 1 tbsp
  • Red Chilli Powder – 1 tbsp
  • Green Chilli – 1 tbsp (paste)
  • Fennel seeds (saunf) – 1 tbsp
  • Oil (for frying)
  • Ginger (paste) – 1 tsp
  • Besan
  • Asafoetida

How to make Vada:

  • Take the moong dal in a vessel and wash it properly.
  • Add more water to it and keep the moong dal for 3-4 hours to soak it.
  • Now drain out the water and keep it in a sieve for some time so that no water is left.
  • Grind the dal into a coarse paste (Do not add water). Do not grind it finely otherwise you can’t make them flat.
  • Take the paste dal in a container and add all the ingredients (Salt, Red Chilli Powder, Green Chilli, Fennel seeds and Ginger).
  • Mix it gently don’t over do it.
  • Heat oil in a kadhai. Take a hanky damp it in water squeeze all the water.
  • Take a katori, keep that wet hanky on it and hold it tightly from the bottom.
  • Take a small ball of the paste put it on the hanky and softly press it to make the surface flat.
  • Drop it in the hot oil and keep the flame medium. Deep fry them till it becomes golden brown.
  • Take water in a bowl and add vadas in it to remove extra oil from it and make it softer for 1-2 hrs.

Ingredients for Dahi:

  • Salt (to taste)- 1 tbsp
  • Red Chilli Powder – 1/2 tbsp
  • Chat masala – 1 tsp
  • Sugar – 2 tsp
  • Cumin seeds(roast) – 1/2 tbsp
  • Tamarind chutney
  • Green/Podhina chutney

How to make Dahi Vada:

  • Take out vada and press it gently to remove the water soaked in it.
  • Now take curd and whisk the yogurt. Add Salt (to taste), Sugar- 2tsp, Chat masala- 1/2tsp and mix it.
  • Place vada in a serving plate, pour the curd on the vada and sprinkle chat masala powder, red chilli powder and cumin powder.
  • Also put a spoon of tamarind and green chutney.

NOTE-

  • If your paste has become loose you can add a little amount of besan in it.
  • Clean the cloth/ hanky from time to time.
