Mango, we all love it and crave for it the whole year as it is available for just 2-3 months, but the best thing is that we can make a pickle out of it to have it all around the year. Here I have given an extremely simple, quick, and very tasty recipe to make Sweet mango pickle (Aam Ka Meetha Achaar), which is so yummy in taste that you will be glad to have it and it will upgrade the flavor of all that you eat. Also, the aptest species of mango for Sweet mango pickle (Aam Ka Meetha Achaar) is RAMKELA .

There are so many ways in which you can eat sweet mango pickle. I like to prefer eating my aam ka achar with puri, parantha, roti as well as jam on bread. The taste of sweet and sour mango pickle is very flavorful.
The recipe of this Sweet mango pickle is adopted from Gujarat but is very popular in Rajasthan and the rest of the north India. The speciality of this mango pickle is that it does not contain any oil in its recipe.
Because I am a Marwari, you can always find many types of pickles in my kitchen like Mango pickle (aam ka khatta achar), grated mango pickle (aam ka lacha achar), kair ka achar, gonde ka achar, and many more. So I am sharing the same age old recipe that my mother and my mother in law used to follow.
Ingredients for Aam Ka Meetha Achaar
- Raw Mango – 1 kg ; (कच्चा आम)
- Sugar – 1 kg ; (चीनी)
- Red Chili Powder – 1-2tbsp ; (लाल मिर्च पाउडर)
- Salt – 1 tbsp; (नमक)
- Cloves – 6-7; (लौंग)
- Cardamom – 7-8; (इलायची)
- Refine Oil – 2tbsp; (तेल)
- Fennel seeds – 1 tbsp; (सौंफ)
- Onion Seeds – 1/2 tsp; (कलोंजी)
Recipe for mango pickle:
1.Take Raw mangoes, wash them properly and dry them with a clean dry cloth.
2. Now peel them and then cut the pulp into pieces. Remove the seeds from the mango.
3. Take the pieces of mangoes, put it in a vessel and add sugar in it. Mix it and keep it for 1 hour so that the sugar melts.
4. The raw mango pieces will get marinated with sugar.
5. Take a tadka pan add 2 tbsp refine oil in it. When it starts heating add cloves to it. After they start to splutter switch off the flame.
6. Add this tadka in the marinated mango.
7. Take a thick base kadhai (be careful not to use kadhai made of iron) and keep it on gas. Turn the gas on full flame.
8. Add marinated mangoes in the kadhai, allow it to boil. Keep stirring it in small intervals. Now add salt, fennel seeds, onion seeds in it.
9. After it starts boiling cook turn the gas on medium flame.
10. The Aam Ka Meetha Achaar will start becoming soft during this time.
11. After 20-25 min your Aam Ka Meetha Achaar will start becoming thick. Check the sugar syrup (chashni) of achar has become 1 string (1 taar ) thicker or not.
12. Make sure that there should remain some sugar syrup in the kadhai. Do not overcook to evaporate the entire sugar syrup.
13. Switch off the gas and sprinkle the crushed cardamom. Keep it aside to cool.
14. After cooling add the red chilli powder in Aam Ka Meetha Achaar.
15. After that store it in an airtight jar. You can have it for a year or more.
16. Your sour and Sweet Mango Pickle (Aam ka meetha achaar) is now ready.
Meanwhile keep in mind-
- While making the pickle, keep in mind that your sugar syrup does not have more than 1 string or else the pieces of mango will become hard and tight and will not taste good.
- Use a clean spoon while removing the sweet mango pickle and close the lid properly or else the pickle will be spoiled.
