Shahi paneer has special significance in North Indian cuisine. Whether you are vegetarian or non-vegetarians, the dish of paneer is very much liked by everyone. Whether it is a wedding or a party, one thing is always on the menu i.e, shahi paneer.

This Restaurant Style Shahi Paneer is a delightful and rich smooth gravy made with onion, tomatoes, cashew, milk, honey, and cream with dried fenugreek leaves and organic spices that adds up to the aroma. The outcome is a velvety, fragrant, semi-sweet gravy with soft paneer cubes that you are going to adore.

Shahi implies imperial and as the name recommends this is an illustrious royal paneer dish. Apart from Shahi Paneer, we can make many more dishes with Paneer. Like Kadhayi Paneer, Khoya Paneer, Chili Paneer, Matar Paneer, Paneer Paratha, etc. The reason for shahi paneer being called shahi is all the shahi spices and the ingredients used in it.

How to make Shahi Paneer –

Shahi Paneer Ingredients –

  • 200 grams Paneer
  • 2 Onion
  • 4 Tomatoes
  • 2 Green chilies
  • 6-7 Cashews
  • 1 tsp Cumin Seeds
  • 1 Bayleaf (तेजपत्ता)
  • 1inch Cinnamon (दालचीनी)
  • 1 Black cardamom ( बड़ी इलायची)
  • 2 Cardamom (छोटी इलायची)
  • 6-7 Black Pepper
  • 1 tsp Salt
  • 2-3 Cloves (लौंग)
  • 1 inch Ginger
  • 3 clove Garlic
  • 1 tsp Kashmiri Red chili
  • 1/2 tbsp Honey or Sugar
  • 1 tbsp Dried Fenugreek Leaves
  • 5 tbsp Butter or Pure ghee
  • 1 cup Milk
  • 1 tbsp Cream or Fresh milk

  1. To make Shahi paneer, firstly we will cut big pieces of onion, tomatoes, green chili, and ginger. The reason for chopping onion and tomatoes in large pieces is that we will grind it well in the grinder later.

2. Now we will also cut the paneer (cottage cheese) in square pieces. You can also cut the cottage cheese as per your choice.

3. Take a pan or kadhai, put two tablespoons of ghee in it, and put it on the gas to heat. When the ghee gets hot, add cumin, bay leaves, cinnamon, cardamom, cloves and black pepper in the pan.

4. Turn the gas on medium flame. Fry it for 15-20 seconds.

5. Now add onion, green chilies, ginger, garlic and fry them for about 2-3 minutes, then add cashews.

6. After frying cashew nuts for 15 seconds, add chopped tomatoes and half a cup of water and let it cook on low heat for 5-6 minutes.

7. Keep stirring the spice mixture in between. When the tomatoes and onions are cooked well, turn off the gas.

8. When this spice mixture cools down, add one spoon of Kasuri methi (Dried Fenugreek Leaves) to it and grind all of them finely in a grinder. You can also sieve this gravy with a sieve after grinding.

9. Now take a pan and heat it on the gas, then put a spoonful of ghee in it and add the pieces of paneer to fry it slightly for half a minute, do not turn the paneer red, now take out those pieces of paneer.

10. Put two spoons of ghee in the same pan and heat it, now put all the gravy in it. After it, add salt and red chili and cook the gravy for about 3-4 minutes. Till the gravy leaves the ghee.

11. Now put all the pieces of paneer (cottage cheese) in it and stir it for 1 minute. Cook the gravy on medium heat.

12. Now add milk to the gravy, pour the milk according to the need, the gravy should not be too thin or too thick.

13. Keep stirring the gravy while adding milk, otherwise the milk will get curdled.

14. Also, if you like little sweetness in Shahi Paneer, you can add half a teaspoon of honey or sugar. Turn off the gas after cooking for about 1 minute.

15. Your Shahi Paneer is ready. Now you can add cream to garnish it at the time of serving.

Benefit of milk and Kasuri methi –

  • Milk is added to the gravy so that the paneer remains soft later also. And it also adds to the richness of shahi paneer gravy and makes the gravy more royal.
  • Fenugreek leaves (Kasuri Methi) are very good for health. Along with it, it adds aroma and more taste to the gravy. It tastes exactly like a restaurant.

Note –

  • When we add milk while preparing Shahi Paneer, we should keep stirring the gravy continuously so that it does not curdle the milk.
  • Paneer should always be immersed in water so it does not the cottage cheese is not spoiled and remains soft.

How to eat Paneer ki sabzi –

You can eat Shahi Paneer with Rumali Roti, Naan, Paratha, or Fried Rice. Or likewise, serve it with a rice-based dish like cumin rice or veg pulao. Everyone loves shahi paneer very much, so with this recipe, you can make it very easily and quickly at your home.
